1 cup shortening
1 cup sugar
1 egg
1 teaspoon vanilla
1 cup canned pumpkin
1 cup flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon
1/2 teaspoon ginger
1/2 teaspoon allspice
Frosting
3 tablespoons butter
1/2 cup brown sugar
3/4 teaspoon vanilla
4 tablespoons milk
1 cup powdered sugar (may require more add to appropriate texture and taste)
Cream shortening and sugar. Add egg, pumpkin and vanilla. Stir to blend. Add dry ingredients. Drop by teaspoon on to cookies sheet. Bake at 350 degrees for 10 to 12 minutes.
Frosting:.
Combine brown sugar, butter, milk and vanilla in a sauce pan. Bring to a rolling boil. Stir well. Chill in refrigerator for 30 to 60 minutes. Add powdered sugar and frost.
