Strawberry Jam Bar Cookies


1 cup butter
1 cup sugar
2 egg yolks
2 cups flour
1 cup chopped pecans
1 cup strawberry jam

Cream the butter and sugar together in a medium bowl. Beat in the egg yolks. Stir in the flour, then the pecans. Mix well to form a dough. Cut the dough in half. Wrap one half in plastic wrap and refrigerate for 1/2 hour. Press the remaining half into an ungreased 8" x 8" x 2" pan. Spread the jam on top. After it's chilled in the refrigerator for about 45 minutes, roll out the other half of the dough between 2 pieces of waxed paper or plastic wrap, to about 8" square. Lay the rolled out dough on top of the other ingredients in the pan. Bake in a preheated oven at 325° for 55 to 60 minutes, or until lightly browned on top. Let cool completely before cutting into squares.
