Carrot Pecan Cookies

1 cup flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 teaspoon ground cardamom (optional)
1/4 teaspoon cinnamon
1/2 cup butter (at room temperature)
3/4 cup light brown sugar
1 egg
1/2 teaspoon vanilla
1 cup carrots, grated
1 cup pecans, chopped
1/2 cup raisins

Heat oven to 325 degrees; lightly grease 2 cookie sheets.
Combine flour, baking powder, soda, salt and spices.
Beat the butter with the sugar until fluffy- 2 to 3 minutes.
Beat in the egg and the vanilla.
Beat in the flour mixture.
Stir in the carrots, nuts and raisins.
Drop the batter by generous tablespoons onto the baking sheets 2 inches apart.
Bake until the edges are lightly browned, about 15 minutes.
