1 cup butter (softened 
3/4 cup brown sugar (packed) 
2 1/4 cups flour 
1 teaspoon vanilla extract 
1 1/2 teaspoons cinnamon (divided) 
3/4 cup powdered sugar (sifted) 
 
  
Cream butter, sugar in large mixing bowl 
Beat until light and fluffy 
Add vanilla, beat well 
Gradually stir in flour and 1 teaspoon of the cinnamon 
Chill for at least 2 hours 
Scoop with teaspoon, roll between hands until about 2" long 
Place cookies 1 inch apart on cookie sheet 
Bake at 300 F for 25 to 30 minutes 
Remove and transfer to cooling racks 
Allow to cool completely 
Combine powdered sugar and remaining cinnamon, mix well 
Roll cookies in sugar mixture.
