Spiced Christmas Cookies

1 stick softened unsalted butter
1/3 cup packed light brown sugar
1 egg, separated
1 ¼ cp. sifted flour
1 tsp. ground cinnamon
½ tsp. ground ginger
¼ tsp. grated nutmeg
¼ tsp. ground cloves
2 tbsp. granulated sugar

Heat oven to 350. Beat together butter and sugar till light and fluffy keeping aside two teaspoons of egg white, mix the rest of the separated egg into the mixture and mix well. Stir in the spices and four, kneading into soft dough. Roll this dough to about ¼ inch thickness and cut into Christmas shapes, stars etc. Brush these shapes with the egg white and bake for 10-12 minutes. Let them cool to room temperature before dusting with icing sugar.
