Royal Icing

2 large egg whites

3 1/2 cups sifted confectioner's sugar

juice of 1 lemon

beat egg, sugar, & lemon at low speed, until sugar is moistened
beat at high speed, until you can make peaks (about 6 min.)
if too thick, thin with water
