Pecan Sandies

1 cup butter, softened
1/3 cup sugar
1 tsp. vanilla
2 cups flour
1/4 tsp. salt
1 cup finely chopped pecans
1/2 cup confectioners' sugar

In a mixing bowl, beat the the softened butter, sugar and vanilla together. Add the flour and salt and mix well. Stir in the pecans. Wrap the dough in waxed paper and chill for about 2 hours. Shape the dough into 1" balls. Place the dough balls on ungreased cookie sheets and bake in a preheated oven at 400º for 10 minutes. Cool on a wire rack for a few minutes, then, while still warm, roll the cookies in confectioners' sugar. Allow the cookies to cool completely on a wire rack, then roll in confectioners' sugar again. Store in an airtight container.
