Moon Cookies

1 cup (2 sticks) softened butter
1 cup light brown sugar
1 cup sugar
2 large eggs
1 teaspoon vanilla
2 cups flour
2 1/2 cups oatmeal flour (blend oatmeal in coffee mill or blender)
1/4 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking power
12 ounces white chocolate morsels
4 ounces white baking squares, sliced into 1/8-inch-thick slices
1 1/2 cups split cashews

Preheat oven to 375 degrees.

Cream the butter with both sugars. Mix in eggs and vanilla. Add flour and mix well, then add oatmeal flour, salt, baking soda and baking power.

Using a large spoon, mix in white morsels and sliced baking bars.

Add split cashews. (Split them so they look like quarter moons.) Mix well. Roll into 1-inch balls and place on cookie sheet 2 inches apart. Bake for 10 minutes. If you bake them longer, they will be hard.
