Melting Moments

1 cup all-purpose flour
2 tablespoons cornstarch
1/2 cup confectioners' sugar
1 cup butter, room temperature
1 can (3 ounces, or about 1 1/3 cups) shredded coconut

In mixing bowl, combine flour, cornstarch, and sugar. Blend in butter for make a soft dough. Cover and chill if too soft. Shape dough into 3/4-inch balls; roll in coconut to coat. Place cookies about 2 inches apart on ungreased cookie sheets.

Bake in a 300° oven for about 20 minutes, or until lightly browned.
Makes about 3 dozen cookies.
