Christmas Nickers


1 egg
1/3 c. light brown sugar
2/3 c. molasses
1/3 c. shortening
3 1/8 c. flour
1 tsp. soda
2 tsp. cinnamon
1 tsp. ginger
1 tsp. salt

Substitute honey for molasses.
Substitute vanilla for spice.

Cream shortening and sugar. Add beaten egg and molasses. Sift and measure flour, add other dry ingredients. Dough will be soft but press out on floured cutting board and cut cookies in Christmas shapes. Bake on greased cookie sheets at 375 degrees for 10-12 minutes.

Frost while warm with this icing: 2 c. confectioners' sugar 1 tsp. vanilla 1/4 tsp. salt

Walnut halves may be added to soft icing for an extra special touch.
