Chocolate Mint Cookies

1/3 cup margarine, softened
1/2 cup sugar
1/2 cup brown sugar
1/2 cup egg substitute
1 teaspoon peppermint extract
2 1/4 cups flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1/4 cup cocoa powder
1/4 cup chopped walnuts
Nonstick cooking spray

Preheat oven to 350°F. In a large bowl, cream margarine and sugars. Add egg substitute and peppermint extract. In a medium bowl, combine flour, baking powder, baking soda and cocoa powder. Add flour mixture to creamed mixture, stirring just until blended. Stir in nuts. Drop by tablespoonfuls onto baking sheets coated with nonstick cooking spray. Bake 8 to 10 minutes (be careful not to overbake).
