Anise Cookies


1/2 cup butter
1 1/2 cups brown sugar, firmly packed
3 eggs
a few drops of anise oil or 1 teaspoon anise seeds
3 cups sifted all-purpose flour
Toasted aniseeds for sprinkling

Cream butter with sugar; beat in eggs one at a time. Blend in anise oil then stir in flour. Drop from teaspoons onto greased cookie sheet; sprinkle with toasted anise seeds or aniseeds. Bake at 350° for 10 to 12 minutes.
Tops will be pale but bottoms will be golden brown. Keep in an airtight container for several days before eating. Makes about 48 anise cookies.
